Thursday, September 14 * 6:30-9:00pm Cooking fish can be intimidating: fish is delicate and easy to overcook (and always seems to stick to the pan!) We will dispel the fear of cooking fish at home in this Beginner's Guide on How to Shop for, Store, Prep & Cook Fish. Learn which type of fish to choose for the right cooking method. We will prepare fish readily available at the market to make: SEAR-ROASTED SALMON using a restaurant technique to create a golden crusty exterior with a moist interior, PAN-SEARED MAHI MAHI FISH TACOS WITH HONEY-LIME COLESLAW; BROILED CHILEAN SEA BASS WITH ASIAN GLAZE AND GINGER MASHED POTATOES and OVEN-POACHED SALMON WITH A CHAMPAGNE BUTTER SAUCE with a velvety texture thatís elegant enough for a special dinner. We will serve side dishes with each recipe. Cooking Techniques: discussion on carry-over cooking, butter sauces, cookware for fish cookery.
