Kathy Lehr, Bread Expert In May, 2014, renowned bread expert, educator, and restaurant consultant Kathy Lehr attended classes in California where she trained with AVPN (The Association of Verace Pizza Napoletana from Naples, Italy). This association has established a very strict set of rules for the preparation of true Napoletana pizza, which is unlike any other pizza dough in its flavor, chew and extensibility. She is now the only person in Ohio who has received this training for making the dough and baking in a wood-fired oven, which she has adapted to the home oven to produce a delicious pizza. In this class will teach you how to make Pizza Napoletana, authentic pizza with a famously delicious crust. She will demonstrate how to make the classic Margherita Pizza which you will top for a pizza of your choice to enjoy. We will also be making a delicious Pannotello Sandwich, a pita-style round, baked and then filled with arugula, basil, and mozzarella, tomatoes and Parmesan cheese. Last, you’ll also make Napolitano pizza dough to take home to bake. Please bring a medium size bowl for your dough.
